Vegetarian Zereshk Polo with Chicken (Mamsan)

Can an Iranian feast really be complete without the royal Zereshk Polo? We said it can’t! Even if the table is “bi dambeh” (meat-free). Here’s our plant-based version of the king of dishes: the familiar masterpiece—a 400g mountain of 100% Iranian saffron rice, decorated with ruby-red barberries and slivers of almond. To accompany this delight, we partnered again with our friends at Mamsan, selecting a flavorful vegan fillet that doesn’t compromise on the original taste. With this dish, no vegetarian or vegan guest will ever feel left out at the celebration table.
